Open the Bencao Gangmu (Volume 9) to cinnabar (dan sha), listed among the top-grade entries of the Shennong Bencao Jing, and the nature-and-flavor line reads: "sweet, slightly cold, non-toxic."

Non-toxic. If you stopped there, you'd file cinnabar away as harmless and move on.

Don't stop there. Because a few lines down, the same book starts arguing with itself.

The same book, disagreeing with itself

Right inside the cinnabar entry, the Bencao Gangmu gathers earlier voices that flatly contradict the "non-toxic" header:

So within one entry you already have two readings: the flavor line calls it non-toxic; cited authorities call it greatly toxic, even deadly when heated. This isn't a modern editor versus an ancient one. It's the classical record disagreeing with itself — the ancients were not of one mind.

That internal split matters. The neat story where "the old texts say non-toxic and modern science corrects them" is too clean. Even inside the old texts, cinnabar was contested.

Modern chemistry adds a third voice

Then there's what we know now about the substance itself. Cinnabar is mercuric sulfide (HgS) — an inorganic mercury compound. It contains mercury, and that is a plain modern fact, not an interpretation.
